Ok.... so I need some inspiration for recipes! I know all you fabulous cooks out there want to share your family's favorite meal with me! I will tell you ours...
Homemade Calzones
I just make pizza dough in the bread maker, then cut the dough out into personal portions. Sprinkle lots of flour onto the counter first... because they stick like crazy! Roll the dough out into rectangular-ish circles (about 7 inches wide, 10 inches long). Then, spread a small spoonful of spaghetti sauce onto one half of the dough. (preferrably the Four Cheese blend marinara by Classico). Put all your favorite toppings on top of the marinara.

Then you fold the dry half of the dough over the toppings. Press the edges together. Transfer the calzone to a floured baking tray. Cook at 350 degrees for 10 minutes. Pull out of the oven and brush olive oil on the top of the calzone. Cook for 10 more minutes. Wah lah! Yummy, yummy, yummy! Sooo good..... I'm getting hungry just thinking about it!

Orange Chicken
INGREDIENTS
2 tablespoons cornstarch
1 3/4 cups Swanson® Chicken Stock
2 tablespoons soy sauce
Vegetable cooking spray
1 pound skinless, boneless chicken breast, cut into strips
2 cloves garlic, minced
3 cups cut-up fresh vegetables (red pepper, green pepper, and broccoli)
1/2 cup orange marmalade
4 cups hot cooked rice, cooked without salt
DIRECTIONS
1. Stir the cornstarch, stock and soy sauce in a small bowl until the mixture is smooth.
2. Spray a 12-inch nonstick skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and stir-fry until it's well browned, stirring often.
3. Add the garlic and vegetables and stir-fry for 5 minutes or until the vegetables are tender-crisp.
4. Stir in the cornstarch mixture and marmalade. Cook and stir until the mixture boils and thickens. Serve over the rice

We like BBQ Chicken Nachoes
Ingredients:
One or Two CHicken breasts
BBQ Sauce
Cheese
Spanish Rice
Refried Beans
Lime
Chilula Hot Sauce
If you have it:
Cilantro
Sour cream
Olives
Fresh tomatoes
Avacados
Directions
1. Broil Chicken breats
2. Start cooking Spanish Rice.
3. Grade Cheese
4. When chicken is done shred it and place it in a pan with BBQ sauce for a few minutes.
5. Place chips on a tray.
6. Top with Chicken,Rice, Beans, cheese and Broil for two minutes. (Watch them closely they burn easily)
7. Pull out add chilula,lime, and whatever else your heart desires.
8. Enjoy
I meant boil chicken breasts.for step number 1.
We had this one last night...oh so easy and YUMMY (its a Rachel Ray 30-minute meals recipe). The only thing I do different is cook up a pound of mild Italian ground sausage first and then add the other stuff. I think it gives the dish lots of flavor and let's face it...Miller's a meat eater :)
SCUDERI KIDS' FAST, FAKE-BAKED ZITI
Ingredients
•3 tablespoons extra-virgin olive oil, 3 turns of the pan
•3 cloves garlic, finely chopped
•1 (28-ounce) can whole peeled tomatoes (recommended: San Marzano)
•1 (14-ounce) can crushed tomatoes, (recommended: San Marzano)* If San Marzanos are not available, add a teaspoon sugar to your sauce, optional
•Coarse salt
•A handful fresh basil leaves, torn
•1 pound ziti rigate, with ridges
•2 tablespoons butter
2 tablespoons all-purpose flour
•Freshly ground black pepper
•A generous grating nutmeg
•2 cups whole milk
•1/2 cup shredded asiago cheese
•1/2 cup shredded Parmigiano-Reggiano (I used regular parm)
•1 cup sliced fresh mozzarella
•Crusty bread, to pass at table
Directions
Put pasta water on to boil.
In a medium sauce pot over medium heat, saute garlic in extra-virgin olive oil. Chop whole tomatoes and add them to the pan. Add crushed tomatoes and salt and simmer 10 minutes, add basil and simmer over low heat 10 minutes more.
Add salt and pasta to boiling water and cook 6 minutes, leaving pasta a little chewy.
While pasta cooks, melt butter in a small pot over medium heat. Whisk in flour, then cook 1 minute, adding salt and pepper and nutmeg to flour. Add milk and bring sauce to a bubble. Reduce 5 minutes. Drain pasta and transfer to a large casserole dish. Pour the tomato and basil sauce over the pasta and turn to coat the pasta. Pour the bechamel over the already coated pasta. Cover the top of the pasta with Asiago, Parmesan and mozzarella. Place the casserole under hot broiler and melt the 3 cheeses until brown and bubbly, 3 to 5 minutes. Serve immediately with crusty bread.

Pepsi chicken.....
So easy and we love it..
1lb chicken breasts(boneless skinless preferred)
1 can pepsi
1 bottle kraft original bbq sauce.
Dump all ingredients into electric skillet (set skillet to 350) cook for aprox 1 hr flipping chicken occasionally (lid on) once chicken is fully cooked remove lid let sauce thicken to bbq sauce consistency..
serve w pastaroni chicken rice
and cesar salad...
coke will work but pepsi is best. it gives it better flavor.
